Candor Merlot Lot 3
Upon harvest, grapes are cold soaked to enhance fruit flavor and color extraction. Fermentation then takes place in stainless steel tanks where extended pump-over’s allow for further tannin and color extraction. 90% of the Merlot blend was comprised of 2009 grapes which was barrel aged for 12 months. The 2010 portion (5%) of the Candor Merlot adds youthful fruit expression while the 2008 portion (5%) adds complexity and structure. This Merlot holds classic Bordeaux- like aromatics of black cherry, currant and cassis are the signature of Candor Merlot. Along with excellent structure, this wine showcases a silky long finish.
